Bootcamp Paella

(Serves 4)

Ingredients

  • 300g Cauliflower Rice
  • 200g Chorizo
  • 100g Frozen Peas
  • 225g SeaFood Selction (1 packet)
  • 4 Chicken Thighs (boneless)
  • 1 Onion – Diced
  • 1 Pepper – Diced
  • 1 tin Cocout Milk
  • 1tbs Tomato Puree
  • 1tsp Paprika
  • 2tsp Chopped Garlic
  • 1 handful chopped parsley
  • 1 lemon – Quatered
  • Salt & Pepper
  • coconut oil
  • 100ml Chicken Stock

 

Cooking

  1. Heat coconut oil in wok or paella pan, cut chicken and fry until nearly cooked through (just pink).  Season with salt and pepper.
  2. Add pepper and onion fry for 2 mins.  Add Chorizo, Paprika & Parsley. Pour in chicken stock and continue to cook.  Simmer off some of the liquid
  3. Add tin of coconut milk, stir in and Add tomato Puree.
  4. Add Cauliflower rice, Peas & lemon wedges, cover and simmer for 5mins.
  5. Add Seafood, and cook for 5 minutes uncovered to allow excess liquid to burn off.
  6. Serve and Enjoy!
